1/4 cup oil 1/2 cup sugar 1/3 cup packed brown sugar 3 tbsp melted butter 2 large eggs 1 tbsp vanilla extract 1/4 tsp baking soda 1 tsp baking powder 2 2/3 cups flour 1 cup milk Cinnamon and extra sugar 3/4 tsp salt
Mix in oil, sugar, brown sugar, butter.
Mix in eggs. Then add baking soda, baking powder, salt, vanilla.
Gradually mix in flour and milk: 1 cup flour, 1/2 cup milk, mix. Repeat. then add the remaining 2/3 cup flour.
Grease a mini cupcake pan and set preheat oven to 250. Pour batter into the muffin tin and place in oven. Mix sugar and cinnamon to make cinnamon sugar mix. After about 5 min of cooking, sprinkle cinnamon sugar onto the tops of the muffins. Then let cook for another 10-15 min.
Take out of the oven. Place cinnamon sugar in a bag or large container with lid. Place muffins in in container, close lid, and shake, allowing the cinnamon sugar to stack to the muffins. Repeat this until all have been processed, and then let cool.
Muffins are best served within the next few days at room temperature or toasted (even better!).
